Trinidad Black Cake aka Caribbean Rum Cake
Every Caribbean island has their version of a black cake, which is traditionally used as the base for wedding cakes. However it is most famously served at Christmas. The 'hero' of this cake is the fruits are soaked in rum, & brandy.
Ingredients: Dried Mixed Fruits, Free Range Eggs, Flour, Butter, Sugar, Browning, Vanilla Extract, Mixed Spices, Rum, Brandy.
