Pastelles
Closely related to Puerto Rican Pasteles, Venezuelan Hallacas and the Mexican Tamales, Trinidadian Pastelles are the perfect dish for connoisseurs of luxury cuisine!
Traditionally served at Christmas they also make a wonderful entrée or a starter.
Made with a seasoned cornmeal dough balls which are flattened then filled with an aromatic mix of juicy minced meat or fish, fragrant olives and capers and sweet raisins and wrapped in banana leaf and foil before being steamed to perfection.
Pastelles are as mouth watering as they are nostalgic. It’s a labour of love that celebrates tradition while tantalising taste buds.
Ingredients: Cornmeal, Tantie Green Seasoning Marinade, Raisins, Capers, Olives, Olive Oil, Butter, Achiote/Roucou. (Variations: Lamb, Beef, Fish, Chicken and Soya)
